Remove from oven and squeeze garlic from covering.</li><li>Bring a pot of salted water to a boil, kill lobster, add to pot and cook for approximately 4-5 minutes. Remove lobster from pot, place in ice bath until cool, remove meat from shell and slice.</li><li>Grind pork in meat grinder.</li><li>Combine all ingredients reserving one egg (egg wash) to seal spring rolls.</li><li>Heat pan and add soybean oil (med heat, pan fry).</li><li>Cook tasting portion of mix to check seasoning. Who doesn’t love noodles? Noodles, or <em>pancit</em>, have been a staple of Filipino cuisine for hundreds of years. Introduced by Chinese traders, pancit has moved around the archipelago taking on different flavors and toppings depending on the town or province.</p><p>When I was growing up, my mom would make pancit bihon (rice noodles) and canton (egg noodles) on special occasions — or when my brother and I were on good behavior. Here’s my version of pancit canton that’s served at my restaurant Kuma Inn on the Lower East Side. This version of pancit canton is packed with a ton of flavor highlighting notes of salty, sweet, sour and umami. The combination of the Chinese sausage, pork belly, fish sauce, oyster sauce and fresh vegetables bring the dish together while the calamansi or lime juice cuts through the richness. It's always a part of our Christmas spread.</p> <h5>Pancit Canton: Stir-Fried Egg Noodles</h5><p><em>Yields 4-6 servings</em></p> <ul><li>3 tablespoons canola oil</li><li>1 tablespoon garlic, chopped</li><li>1/4 cup onions, sliced</li><li>1/2 cup pork belly, sliced</li><li>1/2 cup Chinese sausage, sliced</li><li>1/2 cup carrots, julienned</li><li>1 cup bok choy, sliced</li><li>1 pound egg noodles, par cooked</li><li>4 ounces water or chicken stock</li><li>1.5 tablespoons fish sauce or to taste</li><li>2 tablespoons oyster sauce, to taste</li><li>Black pepper, to taste</li><li>1 tablespoon calamansi or lime juice, to taste</li><li>Scallions, sliced for garnish</li></ul> <ol><li>Heat oil in a wok or pan. He roasts vegetables to fortify a flavorful vegetarian broth, sears bok choy in place of his usual beef, sweetens his stock with carrots and adds earthiness with oyster mushrooms. Chef King says "fresh herbs and pho go together like peanut butter and jelly," adding basil and cilantro.</p> <h5><img alt="beef pho" data-entity-type data-entity-uuid src="/sites/default/files/inline-images/beef%20pho.jpg" class="align-center">King Phojanakong's Beef Pho</h5> <p><em>Yields 2-3 servings</em></p> <ul> <li>5 pounds beef bones: marrow, oxtail, shin and knuckle</li> <li>2 onions, quartered</li> <li>1 ginger, split in half</li> <li>1 garlic, halved</li> <li>2 tablespoons oil, canola</li> <li>2 tablespoons salt, kosher</li> <li>3 star anise, whole</li> <li>3 cinnamon sticks, whole</li> <li>1/4 cup black peppercorns, whole</li> <li>2 tablespoons palm sugar</li> <li>1 pound beef brisket</li> <li>1 pound beef tripe, cleaned</li> <li>10 ounces ribeye, boneless A5 wagyu</li> <li>Fish sauce, to taste</li> <li>1 pound flat rice noodles, soaked</li> <li>2 cups bean sprouts</li> <li>1/2 onions, thinly sliced</li> <li>2 scallions, thinly sliced</li> <li>2 stems Thai basil leaves</li> <li>1 jalapeno, thinly sliced</li> <li>2 cilantro stem with leaves</li> <li>2 lemon wedges</li> <li>2 tablespoons hoisin sauce</li> <li>1 tablespoon sambal chili paste</li> </ul> <ol> <li>Preheat oven to 425 F. Place beef bones, onions, ginger and garlic in a shallow roasting pan and season with oil and salt. Roast in the oven for approximately 45 minutes turning the bones halfway through the cooking until nicely browned. When the bones are nicely browned, remove them and the vegetables and place them in a stockpot.</li> <li>Place the roasting pan on the stovetop over medium-high heat and deglaze with water. Add the liquid and browned bits to the stockpot.</li> <li>While the bones are browning, combine the star anise, cinnamon sticks and peppercorns in a medium skillet over medium-high heat and toast, shaking the pan occasionally until the aromatics are toasted and fragrant, about 5 minutes. Add the toasted spices and palm sugar to the stockpot.</li> <li>Add the brisket and tripe to the stockpot.</li> <li>Fill the stockpot with cold water 2 inches over the top of the bones. Put the heat on high and bring the pot to a boil then reduce to a low simmer.</li> <li>Cook the brisket and tripe for approximately 2 hours or until tender. Remove both items from the pot and continue to cook the broth for at least another 2 hours. Meanwhile, season the ribeye and sear in a smoking hot pan 3 minutes per side, remove and hold. Strain the broth and season to taste with fish sauce.</li> <li>Thinly slice both cuts of meat and the tripe.</li> <li>Place the noodles in 2 bowls along with the sliced meats and tripe. In the latest episode, Chef King shows the pro approach to soup dumplings using a wok and bamboo steam basket.</p> <p>Chef King uses chicken and pig feet in his stock, releasing collagen so the stock is gelatinous, and imparts bamboo flavor when he steams the final dumplings. He demonstrates folding, pinching and twisting the dough for the perfect purse shape and recommends 18 crimps for good fortune per the Chinese lucky number.</p><p>"I'm a chef, and I like to do things with my hands," he explains while mixing his pork filling. I chose to use it for flavor in two places in my recipe for balsamic soy skirt steak with balsamic fish sauce onions.</p> <p>When I’m looking for sweetness in a dish, I don’t always reach for sugar. I like to get creative and substitute other ingredients that will amplify flavor while providing that sweetness, like balsamic. In this case, soy sauce combines with the balsamic in a marinade. The flavors contrast with one another while working well with each other. The balsamic lends an acidity and sweetness while the soy provides saltiness.</p> <p>You want to use a marinade to help break down tougher proteins like beef or lamb. Let this marinade sit for three to four hours or even overnight to impart its flavors. The goal is to balance the whole dish with saltiness, sweetness and acidity. In Asian cuisine, it’s very typical to marry these profiles. Caramelizing onions brings out their natural sweetness, and fish sauce adds umami and saltiness to the dish. Using the balsamic&nbsp;adds sweetness and acidity.</p> <p>I wanted to give this dish my own spin by using Asian ingredients, like fish sauce and palm sugar, combined with an ingredient from Italy to create something unique and delicious.</p> <p><strong>Grilled Skirt Steak with Balsamic Soy Marinade</strong></p> <p><em>Yields 16 oz.&nbsp;serving</em></p> <ul> <li>16 oz. skirt steak, peeled and cleaned</li> <li>3-4 cloves garlic, peeled and crushed</li> <li>1/2 cup Balsamic Vinegar of Modena</li> <li>1 cup soy sauce</li> <li>1/2 cup canola oil</li> <li>1/2 cup honey</li> <li>1 tablespoon Dijon mustard</li> <li>1 tablespoon ketchup</li> <li>1 tablespoon brown sugar</li> <li>1 tablespoon Worcestershire sauce</li> </ul> <ol> <li>In a small bowl, whisk together all the ingredients for the marinade.</li> <li>Place steak in shallow baking dish or resealable plastic bag.</li> <li>Pour marinade over steak.
