The Simple Elegance of Corn with Jesus "Chuy" Cervantes

The Head Chef of Damian visited the ICE campus to make the restaurant's best-selling corn tamal.

Corn is everywhere 鈥 in the grocery store, at the farmer鈥檚 market and maybe even taking over your social media feed via catchy TikTok song.

Though you may think you know everything there is to know about corn, underneath every ear鈥檚 humble, lumpy exterior is a deep well of flavor potential, just waiting to be unlocked.

Just ask Chef Jesus 鈥淐huy鈥 Cervantes. The professional chef visited the Institute of 国产福利 Education鈥檚 Los Angeles campus on September 29, 2022 for a demonstration, where over 50 students and faculty members witnessed corn's versatility firsthand.

Chef Cervantes shucks an ear of corn

Chef Cervantes is currently the head chef at both Damian and Ditroit in the Arts District of Los Angeles. Chef Cervantes has worked at both restaurants, which are part of chef and restaurateur Enrique Olvera鈥檚 restaurant group Casamata, since their openings in 2020. Chef Cervantes was also part of the opening team of Olvera鈥檚 one-Michelin-starred restaurant Cosme in New York City, which was the group鈥檚 first restaurant in the United States.

鈥淲e're using everything, up from seafood in Washington State to obviously the produce in the Fresno Valley, all the way down to Baja California,鈥 Chef Cervantes says. 鈥淰ery much celebrating not just the ingredients and the food, but hopefully the expression of what the community feels like and to us.鈥

After working on Olvera鈥檚 team for five years, Chef Cervantes is very familiar with what it means to create food that showcases the character of a community. In order to do that, Damian鈥檚 food centers classic Mexican flavors while also channeling worldwide inspiration and ingredients.

Chef Cervantes says the menu, which ranges from uni tostada to duck al pastor to lobster salpicon, is a true reflection of the restaurant鈥檚 West Coast home.

鈥淟os Angeles is an incredibly diverse place that is centered around Mexican culture but has so many more cultures that are important to the makeup of the city,鈥 he says. 鈥淪o a lot of our menu has influences from Japanese cuisine, Korean cuisine, Lebanese cuisine, even from just American cooking.鈥

The heart of the food, however, lies in its simplicity, which lets the ingredients鈥 flavor shine. The bestseller dish that Chef Cervantes demonstrated, the tamal de elote, or corn tamal, is a perfect example. The recipe uses all parts of a ccorn cob to create an incredibly flavorful, relatable dish.

This idea 鈥 of looking at one ingredient from many different ways and using every part to create something new and unique 鈥 is something that Chef Cervantes says he learned in culinary school. It's stayed with him throughout his professional career and help inspire lots of delicious food along the way.

Recipe

Corn Tamales

Yield: About 9 plated corn tamales

For the Tamal:

(Standard serving size is 110 grams)

  • 150 grams white masa 
  • 850 grams white corn kernels
  • 30 grams grapeseed oil
  • 17 grams salt
  • 3 grams baking powder

For the Corn Cream:

(Yields a little extra than needed for assembly)

  • 625 grams white corn kernels
  • 185 grams white onion
  • 8 grams garlic
  • 8 grams grapeseed oil
  • 460 grams heavy cream

For Assembly:

  • 1 serving corn tamal
  • 2 ounces corn cream
  • 1 ounces queso fresco

 

For the Tamal:

  1. Remove the husks from the corn and reserve the 20 largest husks for stuffing. Reserve them submerged in water to prevent them from drying out.
  2. Blend the corn kernels in a blender. You should have a coarse puree. 
  3. In a stand mixer, add the masa and corn. Slowly add in the oil, making sure it emulsifies as it is added. 
  4. Lastly add the salt and baking powder, mix until fully incorporated. 
  5. Using the reserved corn husks, stuff by spooning in the batter and folding over the husk.
  6. Once formed, uniformly lay the tamales out in a steam basket or perforated pan if using an oven.
  7. Steam for 45 minutes. Once steamed, allow to rest at least one hour before serving. Re-heat with steam if necessary.

For the Corn Cream:

  1. Thinly slice both the onions and the garlic. 
  2. In a pot add all the vegetables to the grapeseed oil and saut茅 until translucent. 
  3. Add the heavy cream and allow to reduce by half.
  4. Cool the mixture and blend in a blender until very smooth. 
  5. Pass through a chinois.

For Assembly:

  1. Heat the tamal by placing in a steam oven or using steam baskets.
  2. Once hot, open the corn husk enough for the tamal to be dressed.
  3. Pour the corn cream over the tamal and garnish with queso fresco.
